About the role
This role requires a motivated professional who will excel in a fast paced, high attention to detail Hotel environment. To be successful in your application you must have a 'team first' attitude, coupled with the desire and passion to succeed in this challenging industry.
We are after a fun loving, dedicated professional who would embrace the opportunity to work for Australia's leading designer hotel brand.
The Executive Sous Chef needs the appropriate skills and experience from a 5 star hotel environment leading and mentoring a team of over 50 chefs.
It will be advantageous if this candidate has large banqueting experience.
Reporting directly to the Executive Chef Greg Benney you will be responsible for maintaining standards within the kitchen department.

Skills & experience
The candidate will have strong all round experience in
- Cooking techniques
- Food hygiene
- Large conferencing operations
- Communication
Will be advantageous to have the following experience
- Ordering large volume and general administration
- Experience is fine dining techniques, short order cooking, buffet production, canapé menu design and banqueting operations along with basic pasty knowledge.
- Responsible for overseeing preparation, cooking, and presentation of the hotels food offering.
- Reporting directly to the Executive Chef Greg Benny, It is important you are calm under pressure and you promote a positive working environment for your team.
- Uphold strict hygiene and food safety standards, conducting regular checks to guarantee freshness, taste, and the visual appeal of all dishes leaving the kitchen.
- Work closely with kitchen staff, communicating effectively to ensure efficient teamwork, smooth operations, and a harmonious kitchen environment with a keen eye for detail
- Ability to adapt to a fast-paced, high-volume restaurant setting
- Proven experience working seamlessly in a dynamic kitchen environment
