About the Role
Marnong Estate is seeking a dynamic and experienced Restaurant Operations Manager to lead the day-to-day operations across our three vibrant restaurant outlets. This is a hands-on, floor-focused leadership role that offers the opportunity to shape the guest experience, mentor a high-performing team, and contribute to one of Victoria’s most unique hospitality destinations.
You’ll work closely with Restaurant Managers, Supervisors, and kitchen leaders to ensure each outlet delivers consistent, high-quality service. Whether it’s coaching in the moment, refining systems, or finding creative ways to exceed guest expectations, your leadership will be key to the continued success of our food and beverage operations.
What You’ll Do
Oversee daily operations across multiple venues, ensuring service excellence, efficiency, and compliance.
Float between outlets during service, providing real-time support, problem solving, and coaching to FOH teams.
Lead and develop Restaurant Managers and Supervisors, fostering a culture of accountability, collaboration, and high performance.
Take ownership of team performance, rostering, labour costs, and operational targets.
Act as the key liaison between kitchen, FOH, and executive leadership teams to align priorities and communicate clearly.
Review and approve staff rosters, manage timesheets and leave planning, and ensure compliance with internal policies.
Monitor guest feedback and drive initiatives that consistently elevate the dining experience.
Champion operational improvements and systems that streamline workflow and enhance the guest journey.
What We’re Looking For
Proven leadership experience in a multi-outlet restaurant or high-volume hospitality venue.
Strong operational and service knowledge, with an eye for detail and passion for delivering exceptional guest experiences.
Ability to lead from the floor—visible, proactive, and supportive during peak service times.
Experience mentoring and developing teams, with strong people management skills.
Excellent time management and problem-solving abilities.
Confident communicator who can build relationships with guests, staff, and cross-functional teams.
A hands-on, solutions-oriented mindset with a calm and professional presence under pressure.
