Franca’s Ristorante is an exciting new restaurant opening August 2025 within the redeveloped Bayside Geelong Hotel & Apartments. Our restaurant will celebrate the best of regional produce through daily-changing menus featuring traditional Italian techniques—from handmade pasta and sourdough pizza to house-made sauces and gelato.

Bayside Geelong Hotel & Apartments:

We do not take our waterfront location for granted though.

Currently undergoing a transformation, Bayside Geelong Hotel & Apartments is due to open its new build rooms, restaurant and bar, conferencing, and guest facilities in Aug 2025.

When complete Bayside Geelong will offer 110 guest rooms including a mix of 1 and 2 bedroom self-contained and studio apartments, Superior rooms, and an industry leading number of accessible rooms. The hotel will also include multiple conference and event spaces, an indoor pool, sauna and fitness centre.

The property will boast 2 restaurants and bars, Franca's Ristorante opening in August 2025.

The second, our Flagship Restaurant will open September 2026.

The Role:

The Restaurant Manager is responsible for the daily operations of Franca’s Restaurant and In Room Dining. Ensuring a high standard of service, food quality, and guest satisfaction. The role oversees staff performance, manages reservations, and works closely with kitchen and hotel teams to deliver a seamless dining experience. There will be a requirement to fulfill the Hotel Duty Manager role as required.

Responsibilities:

Supervise daily restaurant operations, including opening/closing procedures

Ensure a high level of guest service is consistently delivered

Manage and lead front-of-house staff including, recruitment, training, rostering, and performance

Collaborate with the kitchen and hotel departments for smooth service delivery

Monitor and manage stock levels, ordering, and inventory control

Ensure compliance with RSA, WHS, and hygiene standards

Handle guest complaints professionally and effectively

Assist in achieving budgeted revenue targets and controlling costs

Qualifications & Experience:

Minimum 2 years’ experience in a similar supervisory role

Strong leadership and people management skills

Excellent communication and interpersonal skills

Knowledge of restaurant POS systems and Microsoft Office

Current RSA Certificate (Mandatory)

Police Clearance - Valid
