The Venue

This is a high-volume, community-loved pub located just outside Penrith. Known for its daily classic specials and family-friendly atmosphere, the venue is part of a highly respected hospitality group. The space features multiple food and beverage outlets.

Backed by a solid operations team and structured culinary leadership, this role is ideal for a chef looking to bring stability and growth to a busy kitchen environment with loyal clientele and blue-collar charm.

The Kitchen

Serving over 600 covers a day, the kitchen runs on consistency and camaraderie. With stable senior sous chefs already in place and a team of around 8–10 including CDPs, commis, and casuals, this is a hands-on role requiring strong leadership and communication skills.

Tools like Cooking the Books help keep operations and reporting tight, and Monday admin time allows space to manage cost control, rostering, and planning.

The Role

  • Culinary Leadership: Oversee daily kitchen operations, ensuring consistent delivery of high-quality dishes that resonate with our diverse clientele.
  • Team Management: Lead and mentor a dedicated team of 8–10 kitchen staff, fostering a culture of collaboration and continuous improvement.
  • Menu Innovation: Develop and implement seasonal menus and daily specials that align with our brand and customer preferences.
  • Operational Excellence: Manage inventory, control costs, and maintain compliance with health and safety regulations.
  • Strategic Collaboration: Work closely with the Venue Manager and executive team to drive the venue's success and uphold its esteemed reputation.

What We’re Looking For

  • Experience: Proven track record as a Head Chef or Senior Sous Chef in high-volume, fast-paced environments.
  • Leadership: Strong leadership skills with the ability to inspire and develop a cohesive team.
  • Creativity: A flair for creating innovative dishes that appeal to a broad customer base.
  • Business Acumen: Solid understanding of kitchen financials, including budgeting, cost control, and waste management.
  • Adaptability: Ability to thrive in a dynamic setting, managing multiple priorities with professionalism and poise.
