Located harbourside on the ground floor of the prestigious Crown Sydney in Barangaroo, a’Mare delivers a bold and beautiful expression of Italian dining. Our menu celebrates the richness and tradition of Italian cuisine – featuring antipasti, handmade pasta, fresh seafood, signature cocktails, and world-class wines.

a’Mare offers an unforgettable dining experience, and we’re looking for a Head Chef to lead our high-performing team into its next exciting chapter as we launch a'Mare 2.0.

The Role

As Head Chef, you’ll report to and collaborate closely with our Executive Chef and Chef de Cuisine. You will lead a large brigade of passionate chefs, overseeing daily operations, executing consistently high-quality food, and managing kitchen performance in a fast-paced, high-volume environment.

This is a key leadership role within Maestro Hospitality Group, backed by the professional development and mentorship of Pavoni Plus Pty Ltd – our in-house talent development platform that invests in future culinary leaders.

Essential Requirements:

Full Australian working rights

Minimum 4 years in a kitchen management role

Prior experience with Italian cuisine a must

Prior experience with menu creation

Food Handling Certificate

Understanding of hospitality cost control measures

Ability to keep cool under pressure

Excellent attention to detail

Excellent grooming standards

Formal cooking qualifications

Preferred Requirements:

Food Safety Supervisor certificate

First Aid Certificate

Prior experience making fresh pastas

Butchery experience

Prior experience with Josper oven

Prior experience handling fresh seafood

Responsibilities will include:

· Oversee and inspire the kitchen team, ensuring high morale and efficiency

· Supervise food preparation, cooking, and presentation

· Manage inventory, ordering, and stock control

· Ensure compliance with health, safety, and cleanliness standards

· Monitor and manage labour, rosters, and wage costs

· Identify talent within the team for training and advancement

· Uphold consistency in dish presentation and quality

· Lead ongoing staff training and mentorship

· Implement and maintain cost control measures
