Key Responsibilities:
• Prepare and execute a diverse menu with high attention to detail, ensuring every dish is of exceptional quality, taste, and presentation. • Work collaboratively with management and kitchen team in designing and developing seasonal menus and daily specials. • Maintain consistency in flavour, portion size, and plating across all meals during service. • Supervise and support junior chefs and kitchen hands, providing training and guidance to ensure smooth kitchen operations. • Manage prep work, mise en place, and food storage to ensure kitchen readiness before each service. • Monitor inventory and stock levels; assist with ordering and receiving goods, ensuring freshness and cost-efficiency. • Implement effective kitchen systems to reduce food waste and optimize productivity. • Maintain strict hygiene and cleanliness standards across all kitchen areas, complying with food safety regulations. • Take responsibility for kitchen opening and closing procedures as required, ensuring operational readiness and end-of-day wrap-up. • Support the planning and execution of private functions, special events, and seasonal promotions, helping tailor menus and manage service flow. • Stay up to date with culinary trends and techniques to bring fresh ideas to the kitchen. • Uphold a positive team culture that values collaboration, respect, and pride in the food we serve.
Qualifications and Experience:
• Certificate IV in Commercial Cookery (or equivalent qualification). • Minimum 3 years of proven experience in a professional kitchen environment. • Strong understanding of modern cuisine, seasonal cooking, and plating techniques. • Ability to work calmly and efficiently under pressure in a high-volume kitchen. • Excellent leadership, organizational, and communication skills. • Flexibility to work evenings, weekends, and public holidays as rostered. • Knowledge of food safety and WHS practices.
