Kitchen Manager – La Casa Beach Bar

Location: Mooloolaba

Employment Type: Full-Time

Salary: $75-80k

Reports to: Head of Operations / Owner

About the restaurant:

It is a vibrant coastal venue bringing together Latin heritage and flavours, and Aussie beach culture.

Our evolving menu champions bold flavours, grilled proteins, fresh produce, and street-food-inspired snacks — served in a relaxed yet premium beachside setting.

We’re looking for an experienced and motivated Kitchen Manager to lead our culinary team, drive consistency, and help deliver an exceptional guest experience.

Key Responsibilities:

 Team Leadership & Training

o Oversee daily back-of-house operations with a hands-on leadership approach

o Train and mentor kitchen staff to execute dishes with accuracy, consistency, and care

o Support onboarding and development of junior chefs and kitchen hands

 Kitchen & Service Operations

o Ensure prep and service run smoothly across breakfast, lunch, and dinner

o Maintain high standards of cleanliness, safety, and hygiene (HACCP knowledge preferred)

o Monitor kitchen workflow and support implementation of new systems and processes

 Stock & Ordering

o Manage food ordering, stock rotation, and minimize waste

o Liaise with suppliers, track deliveries, and ensure correct stock levels

o Support costing and recipe accuracy based on established GP targets

 Menu Execution & Quality Control

o Ensure consistent presentation and flavour across all dishes

o Work closely with the Head Chef or Consultant on seasonal updates and specials

o Uphold portion control and kitchen standards across all shifts

 Communication & Collaboration

o Work closely with FOH and management to ensure smooth service and guest satisfaction

o Communicate clearly with team members and foster a positive, respectful kitchen culture

What We’re Looking For:

 2+ years experience in a kitchen leadership role (Sous Chef or higher)

 Strong organizational skills and attention to detail

 Solid knowledge of Latin or Brazilian cuisine (a bonus but not essential)

 Confident with ordering, prep systems, kitchen scheduling, and team leadership

 A passion for quality, seasonal food and running an efficient, happy kitchen
