About Allegria
Allegria is Australia’s leading fresh pasta brand, creating handmade pasta and sauces that bring “restaurant-quality in minutes.” We operate retail kiosks and pasta delis across Melbourne and supply our products to premium venues and delis nationwide.
We currently have 3 stores and entering a significant growth phase. We are looking for a Retail Operations Manager to help us scale our retail footprint while ensuring every store delivers a consistent, exceptional customer experience.
The Role
The Retail Operations Manager will oversee the day-to-day operations of our Allegria kiosks, retail stores, and mobile units. You will be responsible for driving sales performance, team culture, and operational excellence across locations, ensuring that our stores look and feel beautiful, and that our pasta is served with the same craft and care it’s made with.
Responsibilities
Store Operations
Oversee daily operations across all Allegria retail sites (kiosks, delis, mobile units).
Implement systems for opening/closing procedures, rostering, and inventory control.
Maintain the highest standards of presentation, cleanliness, and brand consistency.
Team Management & Culture
Recruit, train, and develop store teams to deliver outstanding customer experiences.
Support Store Managers and Team Leaders with coaching and performance management.
Foster a positive, values-driven culture across all sites.
Sales & Performance
Monitor sales results and identify opportunities to improve conversion and AOV.
Support launches, promotions, and seasonal campaigns.
Provide regular reporting and insights to management.
Operational Development
Help standardise store operations as we expand nationally.
Work with production and logistics teams to ensure product availability and quality.
Drive continuous improvement across customer experience, efficiency, and profitability.
About You
3–5 years’ experience in multi-site retail or hospitality management.
Hands-on leadership style with a passion for food and great service.
Organised, proactive, and comfortable working in a fast-paced environment.
Strong communication and problem-solving skills.
Loves Italian food, craft, and building great customer experiences.
