About the Venue

Perched above the iconic Cylinder Beach, SIBH is more than a pub – it’s the island’s flagship hospitality precinct. Following a major renovation, the hotel will feature:

Four unique bars and gaming lounge

A refreshed bistro and expansive beer garden

Modern function and event facilities

Guest accommodation

Three bottle shops across the island

Key Responsibilities

As Precinct Bar Manager, you will:

Oversee and inspire four distinct bars, ensuring a consistent gold standard of service and atmosphere across each.

Lead, hire, and train a high-performing team of supervisors, bartenders, and barbacks.

Develop creative cocktail menus and signature drinks that balance innovation with timeless classics.

Execute functions and events by managing bar logistics, custom drinks, staffing, and service flow.

Manage operations including stock control, purchasing, cellar organisation, cost management, and compliance.

Prepare rosters and manage budgets, adapting to seasonal demands and peak holiday trade.

Deliver strong commercial outcomes by managing labour efficiency, monitoring COGS, controlling variance, and maintaining accurate financial reconciliations.

Foster precinct-wide collaboration with floor, kitchen, and events teams to deliver seamless service.

Champion a positive, professional culture, upholding Moreton Hospitality’s values of customer-centricity, inclusivity, and accountability.

What We’re Looking For

3+ years in bar management across high-volume, multi-bar or cocktail-led venues.

Strong cocktail knowledge and flair for menu design.

Proven ability to lead large teams across multiple outlets.

High standards of organisation, financial management, and operational discipline.

Flexibility to work evenings, weekends, and public holidays.

A hands-on operator with passion for hospitality, community, and creating memorable guest experiences.
