Head Pastry Chef – Mister Nice Guy's Bakeshop (VIC)

Mister Nice Guy's Bakeshop — Australia's first and leading plant-based bakery — is seeking a Head Pastry Chef to take on a key leadership role in our creative kitchen team in Ascot Vale.

We're after someone with fresh ideas, exceptional cake-making and decorating skills, and the ability to lead, motivate, and inspire a talented team — all while maintaining the high standards our customers love.

About the Role

Reporting directly to the management, you'll oversee the day-to-day operations of the kitchen — ensuring smooth, high-volume production and top-tier quality across all products.

Responsibilities:

Design and create high-quality, visually stunning cakes and desserts

Introduce fresh, innovative ideas and seasonal creations

Supervise and lead the kitchen team, ensuring consistency, efficiency, and quality standards are met

Maintain a clean, organised, and positive work environment

Work collaboratively with management to plan production and develop new menu items

Manage inventory, food costs, and production schedules

Ensure food safety, hygiene, and HACCP standards are upheld

About You:

Proven experience managing a pastry or commercial kitchen

Minimum 3-4 years of pastry or commercial kitchen management experience required

Expert cake-making and decorating skills — frosting experience highly regarded

Creative, detail-oriented, and passionate about innovation

Strong communication and leadership abilities

Commercially aware and results-driven

Reliable, efficient, and able to thrive in a fast-paced environment

Some experience in vegan baking techniques and ingredients required

Gluten-free baking experience is strongly preferred

Formal qualifications in Pastry or Commercial Cookery (or equivalent experience) are required.

Head chef experience will be considered as equivalent to formal qualifications in Pastry or Commercial Cookery.
