Located just 100 metres from the beach and parks on the iconic Mooloolaba Spit, our venue combines contemporary coastal charm with a Japanese Fusion menu that is seafood dominant and complemented by an amazing steakhouse offering with the finest cuts available. We are open for lunch and dinner daily from 11:30am until late, and proudly feature an extensive wine list of over 350 labels and 40 by the glass, curated by a team of dedicated sommeliers.

About the Role
We are seeking an experienced and dynamic Restaurant Manager to lead our front-of-house operations and ensure every guest enjoys an exceptional dining experience.
You will be responsible for:
Overseeing daily FOH operations with a strong focus on service excellence
Leading, mentoring, and motivating a team of section waiters, bartenders, sommeliers, hosts, food runners, supervisors, and baristas
Driving a culture of professionalism, energy, and hospitality at the highest standard — equivalent to a Chef Hat–rated venue
Managing rosters, labour costs, and operational budgets in line with business targets
Working closely with the Head Chef, Executive Chef, and Group Operations Manager to deliver seamless coordination between FOH and BOH
Ensuring compliance with all licensing, safety, and workplace requirements
Skills & Experience Required
Proven experience as a Restaurant Manager (or Assistant Manager ready to step up) in an elegant dining or premium hospitality environment
Strong leadership skills with the ability to inspire and manage a diverse team
Solid knowledge of food, wine, and beverage service, with the confidence to support sommeliers in delivering world-class wine experiences
Exceptional organisational and problem-solving skills
A passion for hospitality and creating memorable guest experiences
Experience in a Chef Hat–awarded or Michelin-recognised restaurant is highly beneficial
Australian work rights are required for this position
