Arthur is a modern Australian restaurant tucked into a beautifully restored Victorian terrace in Surry Hills. With a set menu that evolves with the seasons and a beverage program that champions local producers, Arthur is dedicated to creating a dining experience that is thoughtful, generous, and distinctly Australian.
We’re seeking a Restaurant Manager and sommelier to lead our front-of-house team and take ownership of both service and the beverage program. This is a hands-on leadership role where you’ll run the floor, shape the wine list, and work closely with the Head Chef and owners to refine how the restaurant operates day to day. With an exciting change coming up in Arthur's future, you will play a pivotal role in bringing this new vision to life.
What you’ll do:
Lead and inspire the FOH team to deliver warm, confident, and professional service
Curate and manage the wine list, developing relationships with Australian producers and suppliers
Manage rosters, bookings, and guest communications
Support, train, and mentor team members to keep standards high and culture positive
Maintain smooth service flow, strong kitchen coordination, and venue presentation
Ensure compliance across RSA, OH&S, and operational standards
What we’re looking for:
2+ years’ experience in restaurant management or senior FOH leadership
Strong leadership and organisational skills
A genuine passion for Australian wine and produce, with the confidence to build and maintain a thoughtful list in adherence with COGS targets
Calm, solutions-focused approach with excellent communication skills
Flexibility to work evenings, weekends, and public holidays (Arthur is currently open Wednesday-Sunday)
