At RUSE BAR & Brasserie, we pride ourselves on delivering a dynamic and elevated dining and bar experience in the heart of Parramatta. Known for our exceptional cocktails, curated wine list, and vibrant atmosphere, we are now seeking an experienced and passionate Bar Manager to lead our bar operations and drive excellence in service, innovation, and hospitality.
The Role
As Bar Manager, you will oversee the full operation of our bar, ensuring world-class service and creating memorable guest experiences. This is a hands-on leadership role, where you’ll balance operational management with inspiring and mentoring your team.
You will be responsible for:
Leadership & Team Management: Recruiting, training, rostering, and mentoring bar staff to deliver consistent and professional service.
Beverage Program Development: Driving innovation across cocktail menus, spirits, wine, and beer offerings while maintaining alignment with the RUSE brand identity.
Operational Excellence: Managing daily bar operations, ensuring smooth service, compliance with licensing, RSA, OH&S, and stock control requirements.
Financial Management: Monitoring budgets, controlling costs, managing inventory, and working to achieve financial targets.
Customer Experience: Leading by example on the floor, engaging with guests, and ensuring a high standard of hospitality and customer satisfaction.
Collaboration: Working closely with the General Manager, Head Chef, and wider management team to deliver cohesive service across the venue.
About You
You are an experienced bar leader with a genuine passion for hospitality, strong knowledge of beverages, and a flair for delivering innovative and memorable bar experiences.
You will bring:
Proven experience in a Bar Manager or Senior Bar Supervisor role within a high-volume, premium venue.
Strong knowledge of cocktails, spirits, wine, and current bar trends.
Exceptional leadership, training, and people management skills.
Strong financial acumen with the ability to manage budgets, stock, and reporting.
Excellent organisational and problem-solving skills, with a calm and professional approach under pressure.
A passion for hospitality and a commitment to delivering standout guest experiences.
RSA certification (essential).
