At Pomona Distilling Co, we've created something truly special—rooted in community, quality, and unforgettable experiences, from paddock to plate and grain to glass. Our kitchen crafts modern bistro fare that showcases fresh, local produce, and we're looking for a Head Chef to help lead the next chapter.
We currently open Wednesday–Saturday for lunch and dinner, and Sundays for lunch. With an exciting expansion underway—including a standalone function & events space—there are significant opportunities to grow your career with us. The venue will operate three distinct kitchens, including a dedicated outdoor smokehouse.
The Opportunity
As our Head Chef, you'll work closely with the Executive Chef to lead day-to-day kitchen operations across multiple outlets. You'll mentor a talented team, drive consistency and creativity, and help shape menus for the restaurant, functions, and events—while bringing our new smokehouse offering to life.
Key Responsibilities
Lead multi-kitchen operations across restaurant, functions/events, and outdoor smokehouse; ensure seamless service and exceptional food.
Support the Executive Chef with strategy, standards, menu development, and seasonal changes.
Inspire, train, and roster a high-performing kitchen team; foster a positive, growth-focused culture.
Own kitchen performance: inventory, ordering, prep systems, pacing, wastage control, and service flow.
Manage COGS and labour to budget while maintaining quality and consistency.
Champion food safety & compliance: HACCP standards, hygiene, and regulatory requirements.
Collaborate with Front of House to deliver coordinated, guest-first experiences—especially during high-volume events.
About You
Proven experience as a Head Chef or senior Sous/CDC in a fast-paced, quality-driven venue.
A minimum of 3-5 years of experience as a Head Chef or senior Sous/CDC in a professional kitchen environment is required.
Strength in team leadership, training, and calm, clear communication.
Passion for seasonal, local produce and modern bistro cuisine; smokehouse/BBQ experience is a plus.
Sharp organisation and execution under pressure across multiple kitchens.
Solid understanding of food safety, compliance, and cost control.
Certificate III in Commercial Cookery (or equivalent) and Food Safety Certificate required.
Experience with functions & events catering highly regarded.
Australian permanent residency is required for this position.
