Glenny Kebabs currently has 7 stores in Melbourne, with our 8th location being planned for later this year. We are planning to open 4-6 new stores for 2026 alongside with franchising.

The successful candidate will have a proven track record as an Operations Manager or General manager, who is looking to strike the balance of great product, good values and driving business!
You must have excellent commercial acumen, a sound business operator and is always willing to jump on the tools and help the team when required - ‘Great leaders will never expect their team to do something they wouldn’t do themselves’.
The role is 5 days a week, and weekend coverage will be required pending business needs. Late starts and finishes, so you can enjoy a bit of a sleep in!
It is not suited to someone who time watches and wants to work a very scheduled 5 days, this is hospitality and it requires someone to be VERY flexible and want the adrenaline of constant moves
The ideal candidate is looking for the next challenge to oversee the expansion of new site openings within Melbourne.
You must be able to jump into a business, make your own analysis and move forward to plan positive changes and apply them
Responsibilities
Oversee our high performing sites and their operations in their entirety. Ability to take on several more sites in the near future in Melbourne. Areas included in the role are outlined below:
People – develop, support, train and coach external, internal talent, increase tenure/reduce turnover. Focus on productivity and labour costs
HR – interviewing senior roles, training documentation, performance management
Brand – highest of standards relating to product quality and business growth
Team - support your assistant venue manager, venue managers, area manager and head office team.
Experience – protect our customers, reduce wait times, increase customer satisfaction, enhance ambiance, cleanliness & stores presence
Sales – marketing initiatives, increase spend per transaction, turnover increase per site
KPI’s - monthly P&L reviews, budgeting and forecasting, yearly budgets
Supply Chain – COG’s, waste, stock controls and yields
Rostering – Tanda system, labour controls and set budgets, maximise efficiencies
Safety – food safety, council inspections, risk and hazards
Other – 1 on 1’s and business reviews with Managers, facilitate weekly Operations Meeting, work in sites when / if needed, execute new site openings seamlessly.
You would be required to undertake hands on training, so that you can learn the business and tasks inside out. We don't believe a leader can be a leader, without knowing and being able to undertake any and every role our team members do.
Requirements
Minimum 3 year's experience in the same, or similar role
Previous multi-site experience is required
Strong connection with team and people in order to build a strong culture and increase tenure
Proactive leadership and displays a strong initiative level
Ability to meet budgets and set KPI’s, engage your team on this journey
Provide ongoing feedback to your team and have difficult conversations when required
Outstanding time management and organisational skills
Ability to multi-task, work autonomously and efficiently to meet deadlines
A passionate hospitality background is a must
A desire to recreate an industry and go large with it
Hight level of communication skills
Confidence
Quick on your feet and quick to jump to action
Must be able to be self thinking, find problems and solutions without constant supervision to lead the business
