About the role

We are seeking an exceptional Executive Chef to join our talented team at The Lodge Jamberoo', a premier hospitality destination in the heart of Jamberoo, NSW. In this full-time role, you will be responsible for leading our kitchen operations and overseeing the creation of exceptional dining experiences for our guests.

What you'll be doing

Develop and manage the overall culinary vision and direction for the hotel's food and beverage offerings

Lead and motivate a team of skilled chefs to deliver consistently high-quality, innovative dishes

Oversee the creation of seasonal menus and daily specials, ensuring they align with the hotel's brand and target market

Manage food preparation, presentation, and service to uphold the highest standards of quality and efficiency

Maintain strict cost controls, inventory management, and budgeting for the kitchen department

Foster a positive, collaborative, and professional work environment in the kitchen

Ensure compliance with all relevant health, safety, and food hygiene regulations

What we're looking for

Minimum of 5 years' experience as an Executive Chef or in a similar senior culinary leadership role

Strong background in managing a fast-paced, high-volume kitchen within the hospitality industry

Proven track record of creating innovative, visually appealing, and delicious menu items

Excellent communication, leadership, and team management skills

Thorough knowledge of food safety, hygiene, and cost control practices

Passion for using fresh, locally-sourced ingredients and developing sustainable practices

Formal culinary training or qualifications, such as a degree in Culinary Arts or equivalent
