One of Melbourne’s best kept secrets, Candela Nuevo is a private members’ club located in the heart of the CBD. Spanning across two levels, the club features a restaurant, rooftop bar, cigar lounge, private event spaces, boardroom and meeting rooms.

By day, the club is a corporate sanctuary for board meetings, client lunches, and presentations. By night, it transforms into a sophisticated wine, cocktail, and cigar bar where members host glamorous events or simply unwind in style.

About the role

We are seeking a highly skilled Head Bartender to lead the bar operations across our Rooftop Bar and Lounge. This role is hands-on, combining leadership with service, ensuring an elevated cocktail and spirits program for our members. You will also play a key role in private events and functions, providing world-class hospitality and guiding the bar team.

What we are looking for

Minimum 3+ years’ experience in a high-end bar, cocktail lounge, or hotel environment

Strong leadership skills with the ability to train and inspire a small team

In-depth knowledge of cocktails, spirits, and wine (whisky knowledge highly regarded)

Ability to deliver seamless service in both lounge and function settings

Excellent communication and customer service skills with attention to detail

Flexible availability for afternoon/evening shifts (Tuesday–Saturday)

A genuine passion for hospitality, with initiative and a polished presence
