Built on quality, consistency and authenticity, we are expanding and now seeking a highly skilled Head of Pastry to join our leadership team.
The Role
Reporting to the Site Manager, the Head of Pastry oversees all pastry production operations and leads the Pastry and Kitchen Teams. This hands-on leadership role ensures production starts smoothly each day, quality standards are met and performance targets are achieved. You will be responsible for optimising processes, mentoring staff, and ensuring compliance with food safety and OHS requirements.
Key Responsibilities
Lead, train, and mentor Pastry and Kitchen teams to deliver consistent results.
Manage dough preparation, sheeting, laminating, and baking at scale.
Conduct quality checks and implement corrective actions when required.
Ensure compliance with HACCP, GMP, allergen controls, and OHS standards.
Report daily production performance and drive continuous improvement.
Oversee rostering, attendance, and staff development including succession planning.
Collaborate with QA and senior management to maintain efficiency and quality.
What We’re Looking For
Proven experience in high-volume pastry manufacturing.
Strong knowledge of industrial pastry equipment, automated production lines, and troubleshooting.
Excellent leadership and people management skills with a focus on training and development.
Strong understanding of HACCP, GMP, and OHS practices.
Results-driven, detail-oriented, and adaptable to fast-paced environments.

The Future of Garlo's
In May 2013, the Garlick family moved their Head Office and Bakery to a brand new, purpose built 1350sq. metre facility in St. Peters Sydney. coincidentally the new home of Garlo's is only 900 metres from their old site in St. Peters where they lovingly made their pies since 2001. the new baking facility has a current capacity to produce over 4500 units an hour, but also flexible enough to custom manufacture any pastry product you may desire.
From April 2014, Garlo's Pies are now available across Queensland

Having outgrown our St Peters factory, Garlo's have opened a brand new bakery at 5 Garema Circuit Kingsgrove NSW 2208. Four times the size of St Peters, and conveniently located, the new premises will take Garlo's into the future with new pie ranges, and more and more outlets.
