About the role

Trimboli Group is seeking an experienced Chef Sous to join the talented team at their flagship Italian and Sons restaurant in Canberra, ACT. As Chef Sous, you will play a crucial role in the daily operations of the kitchen, supporting the Head Chef in delivering exceptional Italian cuisine to our discerning customers. This is a full-time position based in our Canberra restaurant.

What you'll be doing

Assisting the Head Chef in managing all aspects of the kitchen operation, including menu planning, food preparation, and team supervision

Ensuring the highest standards of food quality, presentation, and consistency are maintained

Overseeing the efficient and effective use of kitchen resources, including inventory management and cost control

Providing hands-on leadership, mentoring, and training to the kitchen brigade

Collaborating with the front-of-house team to deliver an exceptional dining experience for our guests

Maintaining strict compliance with all relevant health, safety, and hygiene regulations

What we're looking for

Minimum of 5 years' experience as a Sous Chef or in a similar senior culinary role, preferably within a high-volume, fine dining Italian restaurant

Thorough knowledge of Italian cuisine and techniques, with a proven ability to create innovative, flavourful dishes

Strong leadership skills and the ability to motivate and develop a kitchen team

Excellent time management and multitasking capabilities, with the ability to work calmly under pressure

Exceptional attention to detail and a commitment to maintaining the highest standards of food safety and cleanliness

Flexibility to work a range of shifts, including evenings, weekends, and public holidays
