The Role – Key Responsibilities

Lead day-to-day culinary operations across Cora and Beach Hotel Broadbeach, ensuring consistency, creativity, and exceptional execution

Design and deliver seasonal menus tailored to each venue’s unique identity and guest expectations

Oversee kitchen staffing, rostering, and wage management to align with seasonal trade and service demand

Implement cross-training strategies to build an agile, multi-skilled team

Maintain tight control of COGS, stock levels, and supplier relationships

Ensure full compliance with WHS, food safety, and hygiene standards

Champion a strong, positive kitchen culture through hands-on leadership and mentoring

Collaborate with senior management to elevate systems, team capability, and overall guest experience

What We’re Looking For

Proven experience as a Head Chef or strong Senior Sous Chef in premium, high-volume venues

Deep understanding of cost control, labour management, and BOH structure

A creative mind balanced by a commercial, results-driven approach

Natural leadership ability with a passion for building and mentoring a great team

Organised, calm under pressure, and focused on continuous improvement

Strong communication, planning, and problem-solving skills
