Guests can enjoy top-tier amenities, including Ten Stories restaurant, the luxurious Arches on Market, an outdoor swimming pool, and eight cutting-edge meeting rooms, one of which is a heritage-listed ballroom accommodating up to 400 guests.

Swissôtel Sydney is currently seeking for a passionate and innovative Sous Chef to lead hotel outlets during dinner services.

About the Role

Reporting directly to the Executive Chef, this role involves overseeing kitchen operations across multiple dining venues, including Ten Stories, Arches Bar, Executive Lounge, and In-Room Dining. The successful candidate will work closely with a skilled team to ensure the delivery of high-quality cuisine and an exceptional guest experience.

Key Responsibilities

Oversee the smooth day-to-day operations of the Kitchen and Stewarding team

Hands-on management à la carte service across dining outlets

Collaborate with Front of House teams to maintain high food quality and exceptional service standards

Ensure adherence to food preparation, presentation, and cooking techniques that align with set guidelines

Manage food costs and expenses effectively

Provide ongoing training and development to upskill internal talent within the kitchen team

Maintain the highest hygiene and food safety standards in line with Health & Safety regulations and HACCP guidelines

About You

To be considered for this role, you should have:

Proven experience in a similar role or within a multi-outlet dining environment

Previous experience in training and mentoring kitchen staff

A detail-oriented and proactive approach to kitchen management

Relevant trade qualifications

The ability to design menus in alignment with brand guidelines and venue identity

Strong knowledge of food safety protocols, including HACCP

Flexibility to work on a rotating roster, including weekends and public holidays

Full working rights in Australia
