About the role: Sea West seeks a full-time onboard marine chef to join our team, working for our premium brand Rottnest Cruises. This iconic cruise operates in Rottnest for 4-5 day stretches, with the boat provisioned and headquartered in Mandurah (so you'll need to be prepared to come to Mandurah as part of this role). Reporting to our renowned head chef, Tony Howell, you'll cook delicious food for our customers on these cruises, aboard our boat, Crusader 3. You will join a very supportive, close knit team and will benefit from training from Tony, as well as the onboard crew, if you are new to marine life. You will prepare food in front of customers, so in addition to being a great chef you must be friendly and outgoing.

NOTE: We do not have any Australian work visa sponsorship opportunities available.

What you'll be doing

Prepping in the land-based commercial kitchen, and cooking onboard

Ensuring adherence to all food safety and hygiene standards

Maintaining a clean and organised kitchen and vessel galley

Working as part of a boat crew

Participating in menu planning and development

Ordering and managing food stock and inventory

Adhering to all health and safety regulations and keeping required food safety records.

What we're looking for

A positive attitude; keen to learn and develop

A passion for quality, and creating delicious food using fresh, local seafood and produce.

Must love the water/ boats (we can train you if no marine experience, however you cannot suffer from seasickness).

at least 2+ years experience as a chef/ cook in a commercial setting

At least Cert III Commercial Cookery qualified

Safe Food Handling certified

Strong attention to detail

A commitment to maintaining high standards of food safety and hygiene

Excellent communication and teamwork skills

Must be available weekends and holidays.

Must have permanent work rights in Australia.
