We're firing up something special on the Sunshine Coast. Fish House Steak & Grill – the latest venture from the iconic Bella Venezia team – is seeking a passionate and talented Grill Chef to take the reins of our custom grill section at our premium new venue, located at 25 Parkyn Parade, Mooloolaba.

About the Role:
As our Grill Chef, you’ll lead the charge in delivering expertly cooked meats using rock-fired grilling and modern combi oven techniques. Our menu celebrates a curated selection of Australian beef cuts, including grass-fed, grain-fed, dry-aged, and marble-rich wagyu, complemented by a premium seafood offering.

Key Responsibilities:

Operate and manage the grill station using a new char grill and combi oven

Cook beef and seafood to perfection, including dry-aged and specialty cuts

Uphold strict quality and presentation standards

Collaborate with the Head Chef and kitchen team to execute a dynamic, evolving menu

Ensure all food safety, hygiene, and OH&S standards are exceeded

What We’re Looking For:

Proven experience on the grill in a high-end or fast-paced kitchen

Strong knowledge of beef cuts, ageing, doneness, and temperature control

Passion for cooking over rocks and delivering bold, charred flavour

Comfortable using modern equipment, including char grills and combi ovens

Calm under pressure and a strong team player

Committed to consistency, cleanliness, and craftsmanship
