The Role
As Executive Chef, you will take the lead on as many facets of the restaurant as possible from the beginning of your tenrure. The kitchen is fitted with state of the art equipment as well as the floor plan. The rest is up to you. From team recruitment, supplier relationships, menu development and cost modelling through to launch and ongoing operations.
This is a hands-on, full-scope leadership role that will suit a chef who is just as confident in culinary ability as they are in cost control meetings, recruitment conversations, and performance reviews. The ideal candidate will bring strong steakhouse or grill experience, the ability to lead large, skilled brigades, and a calm, composed leadership style.
Key Responsibilities:
Lead the pre-opening process, hiring, training, and systems development
Design and implement a structured, high-performance kitchen operation
Develop a produce-driven, protein-led menu with consistency at its core
Manage all BOH operations including ordering, food safety, stock control, and cost of goods
Collaborate closely with front-of-house, group execs, and ownership to ensure seamless service and shared goals
Build a strong kitchen culture that supports training, accountability, and longevity
Maintain full compliance with WHS and food safety standards
Drive performance and profitability without compromising on quality
About You
Previous experience as an Executive Chef or Senior Head Chef in a high-end or premium casual venue
Strong technical skillset in protein cookery, grill, butchery, and large-format plating
Experience overseeing a medium-volume, high-quality kitchen environment
Proven ability to lead, coach and retain a skilled team
Clear understanding of food cost, labour cost, systems and financial reporting
Comfortable balancing creative execution with business discipline
Confident communicator who can liaise across departments and lead from the front
Experience in a new opening or large-scale relaunch is highly desirable
