Callao, Sydney’s home of Nikkei Peruvian cuisine, is looking for a passionate and skilled Sous Chef to join our ambitious kitchen team.
Our menu fuses the bold, vibrant flavours of Peru with the precision and elegance of Japanese technique — a modern take on Nikkei cuisine that’s fast earning a reputation in Sydney’s dining scene.
We’re after someone who thrives in a high-performance environment, leads by example, and is excited to push creative boundaries.
What we’re looking for:
Proven experience as a Sous Chef or Senior CDP ready to step up
Deep respect for quality produce, sharp technique, and clean execution
Passion for Nikkei, Peruvian, Japanese, or modern fusion cuisine
Strong leadership, communication, and time management skills
Commitment to consistency, cleanliness, and a positive kitchen culture
