We are looking for an experienced Assistant Restaurant Manager to work alongside our Venue Manager and Head Chef in our new location, Chalky's and Valentines. Chalky's is an adults playground with 6 pool tables, a sports screen that spans across a whole wall and 2 Karaoke rooms. Valentines is a cocktail and wine bar with a speakeasy vibe.

We are fortunate enough to have Chef Marti Brito as our Head Chef. He has worked in hatted and Michelin starred restaurants his entire career working with the likes of David Thompson and Peter Doyle. We are therefore, looking to elevate our customer service offering and add fine dining to Valentines alongside our more relaxed dining offering in Chalky's. We will also be hosting ticketed events including degustation and wine pairing nights for our customers.

The Role

Assist the Venue Manager to run the Venue, with a particular focus on Valentines

Train staff in a high level of service, cocktail making and any other areas needed along with the Venue Manager

Assist in food menu design

Create cocktail menus

Manage staff

Support Venue Manager in recruitment and onboarding of staff

Ensure the venue is presented to a high standard at all times

Ensure customer satisfaction and excellence in customer experience

Support with internal and on occasion, external events

Cash handling

Support with rostering

Support with ordering and building relationships with suppliers

What we are looking for

2+ years in an Assistant Manager or 2IC role in a fine dining restaurant

2+ years people management experience

Customer service and experience focused

High attention to detail

Strong cocktail knowledge and experience in cocktail making and menu creation

Strong wine knowledge

Experience in service in a fine dining establishment and a clear understanding of the standards that come with that

Experience in training staff in a fine dining environment and in cocktail making
