Easts Leagues Club is an award-winning Club with over 30,000 members. Recognised as an industry leading entertainment venue providing quality facilities and services to the Brisbane community. We have an exciting opportunity for a highly capable and motivated Sous Chef to join our kitchen brigade.

The primary responsibility of this role is to support the Executive Chef in managing and leading our kitchen team across multiple food outlets in addition to preparing and providing quality food in a safe, effective and efficient manner to our members and guests.

The role will include, but is not limited to:

The role

• Manage the day-to-day catering operations within the main kitchen, coffeeshop and sports bar;
• Provide hands on assistance during service, ensuring quality, presentation and compliance with food handling, WHS and sanitation standards.
• Complete ordering, ensuring all produce is fresh and to standard;
• Assist in menu planning and development for various food outlets including the main restaurant, sports bar, functions and coffeeshop;
• Preparation of staff rosters in line with operational requirements;
• Train, inspire and lead kitchen staff ensuring our business culture is upheld at all times; and
• Coordinate training programs for apprentices, trainees and new staff.

Ideal candidate

• Qualification in Commercial Cookery (Diploma or similar tertiary level preferred);
• Preferably 1 year experience as a Sous Chef or a similar role in a high volume kitchen;
• Strong attention to detail;
• Excellent communication and organisational skills;
• Leads by example and fosters pride from your team;
• Capability to build and maintain a positive culture;
• Experience in HACCP principles; and
• Proficient with Microsoft Office, particularly excel.
