The iconic Marlo Hotel is looking for an experienced Head Chef to manage all aspects of the kitchen operations at our coastal pub. With a fully renovated kitchen and an established team this is an opportunity to lead a group of talented chefs in a state of the art kitchen and continue on the growth path and offering at the Marlo Hotel.
Long regarded as a food and beverage destination in East Gippsland, we sit atop the mouth of the Snowy River in an idyllic country township where the pub truly is the heart of the town. About the role
We are seeking a person with progressive ideas, ability to service a 200 seat pub with ease and lead a team with care and purpose. Experience in high volume kitchens will be considered an advantage, with seasonality a strong influence in venue operations.
Our Head Chef will be committed to the hotel over the peak seasons, but will also enjoy a great work life balance. Operated like a true local venue, we have a great base of staffing and are looking for someone to drive the direction and allow the team to grow. Areas of responsibility include but are not limited to -
Ensuring quality food across the venue in both daily service and functions
To manage food costs and meeting budgets
Food Safety and OH&S management
To contribute to menu development and designing special seasonal offerings
Ensuring the highest standards of food quality, presentation, and flavour
Ordering, maintenance and management of food, including checking quantity and quality of products received and prepared
Working closely with key managers to develop a high standard of communication and collaborative problem solving
Minimum of 2 years experience in a similar role
The of setting production schedules and staff requirements necessary to ensure timely delivery of service and roster coverage
Rostering and the training and development of kitchen team
About You
As an experienced Head Chef you will manage all aspects of the kitchen team.
You are;
Experienced in similar roles with strong professional background.
Motivated and hands on to deliver results.
Capable of high volume cooking and what is required to maintain consistency through peak periods.
Have great time management and planning skills
A natural leader who displays strong and fair leadership, communication, and teamwork skills.
An ability to train and develop kitchen talent.
Ability to work efficiently under pressure and maintain quality standards.
