Mount Erica Hotel is a cornerstone of Prahran and is the kind of pub that feels lived in and well loved. Built in 1853 and reimagined for today by the team behind Marquis of Lorne and Union House, it’s a place that holds all sorts of moments: knock-offs, reunions, first dates, mid-week catch-ups, Sunday resets.
We believe in proper hospitality, the kind that remembers your name, has your drink ready, and doesn’t need a QR code to feel personal. We keep the fire roaring in winter. We put the pie warmer on when the footy’s on, so there’s a hot sausage roll to go with the game on every screen in the front bar. The courtyard’s big enough for your dog to stretch out while you have a pint. And yes, we host the area’s busiest steak night every Tuesday.
There’s oysters and fizz until 6pm on weekdays, because sometimes that’s exactly what the day calls for. Our Sunday Roast brings the neighbourhood in — slow-cooked, generous, and built to fend off the Sunday scaries. And the wine list? Thoughtfully built. Not fussy, just excellent.

About the Role
This is a leadership role that asks for presence, perspective, and a steady hand. As Assistant Venue Manager, you’ll support the day-to-day running of Mount Erica and step up confidently when the Venue Manager isn’t on-site. You’ll be hands on across it all, floor service, bar operations, events, rostering, team culture, compliance, and guest experience.
But more than that, you’ll help protect the heartbeat of the venue. You’ll make sure new team members feel supported. That the regulars are remembered. That steak night flows and the wines at the right temp. That we keep offering hospitality the way it’s meant to be: generous, efficient, quietly excellent.
This is a role for someone who’s ready to lead, not with ego, but with care.
Someone who can think commercially, stay calm under pressure, and see what others miss. We’re after someone who enjoys the work, respects the craft, and takes pride in doing things well.
What the job involves:
Leading day-to-day service across the restaurant, bar, and events
Supporting and mentoring Duty Managers and team leads
Driving a culture of calm, confident hospitality
Tracking sales, wages, and performance to improve operations
Managing compliance, RSA, and licensing standards
Handling ordering, stock control, and daily reconciliation
Supporting recruitment, training, and team development
Liaising with trades and suppliers when needed
What you bring:
Solid proven experience in hospitality leadership roles
A hands-on, service-led approach to management
Financial literacy and attention to operational detail
Confidence with systems, people, and guest relationships
RSA and Food Safety certification
WSET Level 2 a minimum (Level 3 prefered)
What we’re offering:
· A full-time role under employed under Publican.Co Enterprise Agreement 2023/2024
· Salary of $80,000–$95,000 (experience dependent)
