The Venue
Located in a heritage-listed building steeped in history, the Boom Boom Room offers a dining experience that redefines Japanese cuisine. This sophisticated underground venue blends tradition with innovation, showcasing dishes like shiso-cured kingfish, miso-glazed toothfish, and wagyu beef with Polanco caviar. Complemented by an expertly curated menu of rare Japanese whiskies, sakes, and craft cocktails, the Boom Boom Room is the perfect fusion of atmosphere, flavour, and craftsmanship.

The Opportunity
We are looking for an ambitious chef with the caliber of a Senior Sushi Chef to join our talented team. In this role, you’ll take charge of a dedicated Sushi and Sashimi section, ensuring exceptional standards in preparation, presentation, and execution. Working closely with the Head Chef and Sous Chef, this is an exciting opportunity for someone passionate about Japanese cuisine and eager to thrive in a high-caliber kitchen.

Key Responsibilities

  • Prepare and manage your section with precision, maintaining the quality and consistency of every dish.
  • Execute Japanese-inspired dishes such as sashimi, yakitori, and tempura, showcasing creativity and craftsmanship.
  • Monitor food costs through effective portioning and waste reduction strategies.
  • Collaborate on menu development, bringing fresh ideas and innovation to the team.
  • Train and mentor junior chefs, supporting their professional growth.
  • Maintain strict food safety and hygiene standards, ensuring a clean and organised kitchen.
  • Assist with additional duties as directed by the Head and Sous Chefs.

Qualifications & Experience

  • Minimum of 2–3 years in a similar role within high-end or quality authentic restaurants.
  • Strong knowledge of Japanese culinary techniques and ingredients, including sashimi preparation, grilling, and marinating.
  • Exceptional organisational skills and the ability to perform under pressure.
  • Passion for culinary innovation and excellence in presentation.
