🔥 II.II.VI – A soon-to-launch fine dining restaurant where fire takes centre stage, celebrating ingredient integrity and the primal elegance of open-flame cooking.

Your Role

As Head Sommelier, you will shape the beverage identity of both restaurants—developing distinctive wine programs, leading a culture of exceptional service, and creating memorable guest experiences through thoughtful pairings and storytelling.

Key Responsibilities

Curate and manage bespoke wine lists tailored to each restaurant’s culinary philosophy

Deliver an elevated guest experience through impeccable service and expert recommendations

Collaborate with chefs on dynamic pairing menus and seasonal offerings

Oversee cellar management, inventory, and supplier relations

Train and mentor service teams in wine knowledge and premium service standards

Host and lead wine events, exclusive dinners, and tasting experiences

What We’re Looking For

Certified Sommelier (WSET Level 3 or equivalent highly regarded)

Proven experience in premium or fine dining environments

Expertise in old and new world wines, with an instinct for pairings and guest preferences

Charisma, professionalism, and a deep respect for hospitality and guest connection

Strong leadership skills and attention to detail

Knowledge of spirits, sake, and non-alcoholic pairings is a valued advantage
