What will you be doing?
As Sous Chef, you will be reporting directly to the Executive Chef. You will utilise your creative flair and passion for food to exceed diner’s expectations.
You will be responsible for leading and coaching junior team members, ensuring efficient service and high levels of consistency.
In this role you will:
Support the Executive Chef with menu design for all Outlets including Breakfast, Conference & Events, Ms Margot’s, Deck Bar, In Room Dining, Le Petit Chef and Catch Dinner.
Train Team Members and lead by example through the delivery of high-quality menu items that show flair, innovation and quality
Work with and co-ordinate the work of cooks and junior chefs in the preparation and production of food as required
Ensure strict stock rotation and minimum wastage and follow stock control procedures
Maintain excellent presentation standards, showing innovation and exceed guest expectations and meet brand standards.
Keep all working areas clean and tidy & ensuring all equipment is maintained, serviced ensuring all hygiene, HACCP and Work Health and Safety (WHS) requirements are consistently met.
What are we looking for?
Previous experience as Sous Chef or similar role
Strong leadership and management skills
Excellent planning, organising and time management skills
Excellent technical knowledge
