The View on Hannans is a four-star, 128-room motel located on Hannan Street, Kalgoorlie. It features a licensed restaurant and function room, Kal Brew.Co, serving buffet breakfast’s and dinner to motel guests and contractors. We are seeking a Head Chef to lead our culinary team.

About the Role:

As the Head Chef, you will be responsible for:

Leading the kitchen team in daily operations, ensuring consistency and quality in all meals served.

Preparing a 7-day rotating menu for breakfast, dinner, and takeaway lunch options for contractors and in-house guests at The View on Hannans Motel.

Developing recipes and menu ideas using seasonal produce, ensuring dietary requests from guests and customers are accommodated.

Managing mise-en-place preparation while working within budgets and guidelines set by management and approved by the Directors.

Maintaining a clean and efficient kitchen, ensuring compliance with health and food safety standards.

Supervising apprentice and kitchen staff, implementing procedures to maintain high standards of food service, and training staff to deliver exceptional service.

Monitoring stock levels, working within budget, providing regular food costings, managing orders, and minimizing food wastage.

What You’ll Need:

A minimum of 6 years’ experience as a qualified chef, with at least 3 years as a Senior Sous or Head Chef.

Proficiency in computer literacy, including the ability to produce spreadsheets for food costing, budgets, reporting, and menu preparation, with strong kitchen management skills.

An approved visa permitting full-time work in Australia.

Flexibility to work on a rotating roster, including weekends and holidays.

Relevant qualifications, such as an Australian or equivalent qualification, including a 4-year apprenticeship and/or a diploma in culinary skills and hospitality.

A police clearance (to be provided upon successful application).
