Roca Restaurant Byron Bay is seeking chefs for a number of roles, including chef de partie, sous chef and head chef positions. Prospective candidates must possess an incredible passion for South American cuisine, to oversee an exciting new chapter at our iconic landmark.
The successful applicant will enjoy a high degree of autonomy, where they will demonstrate and implement their own ideas, vision and creativity on a plate.
Duties and responsibilities will depend on the position applied for, and will include but not be limited to:
Devising, developing and cooking a range of a la carte dishes, within new and exciting contemporary menus, based on price, availability and market seasonality, in-keeping with our Latin fusion concept
Offering clientele a curated range of hospitality packages and degustation menus, focusing on local, seasonal produce
Overseeing ordering and stock control, and implementing and monitoring wastage minimization strategies
Keeping an eye on fluctuating food costs and maximize gross and net margins in-line with senior management targets and expectations
Ensuring optimum levels of cleanliness; implementing periodic cleaning schedules and adhering to all OH&S practices
Training, motivating and empowering new and existing members of the team
Co-ordinate and conduct kitchen training for new dishes, techniques and standards
Managing inventory; monitoring stock levels, rotation practices, and ensuring the kitchen is stock with relevant goods and equipment
Manage and resolve any issues that arise during service, including equipment malfunctions and staffing issues
Be skilled in preparing and grilling high quality steak and seafood using Argentinian cooking methods
Prospective applicants must possess the following attributes to be considered:
Hold a minimum of 3 years experience in the respective role for which they are applying
Possess chef training and qualification paperwork from an accredited body (domestically or internationally)
Have clear communication skills and a strong command of the English language
Be able to work under pressure during demanding services
Available to work a range of hours, including evenings, weekends and public holidays
Display a positive, driven, approachable and empathetic demeanour
$70 - $90K salary based positions
Annual and sick pay included
Sponsorship opportunities available (if required, and only after completion of a successful 6-month probationary period)
KPI related bonuses available
