Position: Restaurant Manager - Floor Operations
Employment Type: Full-Time, Permanent Ongoing
Salary: $80,000 - $90,000 per annum + performance incentives
Location: Castlemaine, Victoria
Work Arrangement: On-site (hospitality venue-based role)
Roster: Evening and weekend shifts required, including public holidays
Reports To: Venue Manager
Direct Reports: Front-of-house service team (servers, hosts, food runners), Bar Manager

Position Overview
We are seeking an energetic and experienced Restaurant Manager to oversee the day-to-day service operations across our pub, bistro, and dining areas. This hands-on leadership role ensures seamless service delivery, exceptional customer experiences, and effective coordination between front-of-house and back-of-house teams during service periods. The successful candidate will be a visible leader on the floor, supporting staff while maintaining the highest standards of hospitality and helping to further educate our staff through training programs.
Key Responsibilities;
Service Operations Leadership
Supervise and coordinate service across all dining areas during operating hours
Ensure smooth service flow between kitchen, bar, and front-of-house teams
Monitor table turnover, seating arrangements, and reservation management
Oversee opening and closing procedures for all service areas
Handle service challenges and resolve operational issues in real-time
Maintain consistent service standards across pub, bistro, and fine dining sections
Team Supervision & Support
Lead and motivate front-of-house staff including servers, hosts, and food runners
Provide on-the-spot coaching and support during busy service periods
Coordinate staff breaks, section assignments, and shift changes
Conduct pre-service briefings on menu changes, specials, and operational updates for all areas of the venue
Support staff training and development through mentoring and feedback
Manage staff performance issues and escalate concerns to senior management when needed
Manage 6 weekly staff check ins ensuring staff engagement and two way communication is upheld
Customer Service Excellence
Greet and interact with customers to ensure exceptional dining experiences
Handle customer complaints, special requests, and dietary requirements
Oversee reservation management and walk-in seating optimization
Ensure timely and accurate service delivery across all dining areas
Monitor customer satisfaction and address issues proactively
Build relationships with regular customers
Quality Control & Standards
Maintain food presentation and service quality standards
Ensure compliance with food safety and hygiene regulations during service
Monitor cleanliness and presentation of dining areas throughout service
Coordinate with kitchen on timing, special dietary requirements, and menu items
Oversee proper handling of food allergies and dietary restrictions
Ensure adherence to portion control and presentation guidelines
Operational Coordination
Coordinate between front-of-house and kitchen teams for optimal service flow
Manage reservations and reservation software, table assignments, and waitlist during peak periods
Oversee inventory of service items including cutlery, glassware, and linens
Support event service including private functions and special dining experiences
Assist with staff scheduling and coverage during absences
Monitor and report on service metrics and performance indicators
Administrative & Reporting
Complete daily service reports including covers, issues, and feedback
Track and report customer feedback and service improvement opportunities
Maintain accurate records of staff performance and incidents
Support inventory management for front-of-house supplies
Assist with staff scheduling and payroll reporting
Communicate daily operations summary to management team
Essential Requirements
3+ years of floor management or senior service experience in restaurants, pubs, or hospitality venues
RSA certification and experience with liquor service
Proven ability to lead teams during high-pressure service periods
Strong knowledge of food and beverage service standards and procedures
Experience with reservation systems and POS technology
Excellent communication and interpersonal skills
Ability to remain calm and solution-focused during busy periods
Physical fitness for extended periods of standing, walking, and lifting
Desirable Qualifications
Experience in craft brewery, gastropub, or elevated casual dining environments
Knowledge of wine and beer service techniques
Supervisory or team leader training
Experience with event service and private dining coordination
Customer service training or hospitality management qualification
Food safety certification and knowledge of hospitality regulations
Wine knowledge and WSET certification
Success Metrics
Success will be measured by:
Customer satisfaction scores and feedback ratings
Service efficiency metrics including table turnover and wait times
Team performance and staff retention within supervised areas
Compliance with food safety and service standards
Effective coordination between front and back-of-house operations
Revenue per table and average spend optimization
Successful handling of service challenges and customer issues
Key Relationships
This position reports to the Venue Manager and works closely with:
Bar Manager on beverage service coordination
The Head Chef or Kitchen manager on duty on food service timing and quality
Front-of-house staff across all service areas
Operations Manager on compliance and procedural matters
