Sushi sei is located in the Darling Square precinct of Sydney's CBD. Sushi sei offers an omakase-style menu, which is where you leave the menu in the chef’s hand to decide.

You can expect to find the likes of elegant seafood dishes and a signature chawanmushi, creating an adventurous dining experience, full of flavour, character and Japanese charm as they pare each dish in front of you, precisely serving the highest quality fresh fish, and seafood. Bookings need to be made several months in advance.

At Sushi sei, we fill our kitchens with passionate culinarians who relish working with locally-sourced seasonal ingredients, and we run a culinary team that thrives on innovation, respects nature and believes in perfection. We’re currently looking for a standout on-call cook, a foodie at heart, for our outlet kitchens.

Position: Chef

Responsible for ensuring that the standard and quality of the food preparation, production, presentation that it is within budgetary limitations, co-ordinating and supervising of daily work activities, maintaining highest level of work safety at all times. This role is very much hands-on, requiring attention to detail and a positive work attitude to manage and operate restaurant in a sustainable and profitable

Full Job Description

We are looking for a passionate and enthusiastic valuable Chef with experience working in high end or hatted restaurants. This is a rare opportunity to join this small and supportive team who consistently deliver fresh Japanese cuisine in Japanese omakase with a focus on sushi and sashimi.

Sushi sei is the perfect platform to hone your service and communication skills whilst showing off excellent produce from the cutting board direct to the diner. The Omakase is the perfect platform to put your skills on show and experience service like no other.

All applicants must be motivated, independent and enjoy a challenge.

The ideal applicant will have:

5+ years’ experience in hatted, fine dining restaurants or sushi restaurants in Japan

Assisting our team of chefs with basic food prep

Intermediate to advanced knowledge of food preparation, health and safety

Work efficiently in a clean and organized manner

Experience working with seafoods, fish and preparing and cooking tempura food
