Job Title: Brewer
Reports to: Head Brewer
Location: Brookvale, NSW
Employment Type: Full-time | On-site

Purpose

To craft exceptional beers and ensure consistent production quality at Dad & Dave’s Brewing. The Brewer will manage day-to-day brewing operations, coordinate production across our two Brookvale sites, and contribute to recipe development and process improvements.

Key Responsibilities

Develop and refine beer recipes to deliver innovative, flavourful craft beers

Oversee brewing and beverage production (beer, seltzers, RTDs, water, etc.)

Manage production scheduling across both Brookvale facilities to meet tight deadlines

Conduct quality checks to ensure consistency and compliance with food safety standards

Maintain a clean, safe, and organised brewery environment

Train and supervise production staff as required

Operate forklifts and vehicles to move stock, raw materials, and packaged goods

Monitor and maintain brewing equipment; report and resolve maintenance issues

Contribute to process improvements and efficiency across production

Skills & Experience

Minimum 2 years’ professional brewing experience

Strong knowledge of brewing techniques and beer styles

Hands-on experience with brewing equipment (mash tuns, fermenters, packaging lines)

Forklift licence (required) and current driver’s licence (required)

Strong problem-solving and analytical skills

Experience working to tight schedules and production targets

Passion for craft beer and wider beverage innovation

High attention to detail and commitment to quality and safety

Effective communicator and collaborative team player
