Rovollo is a sophisticated Italian restaurant and wine room located in the heart of Sydney’s CBD. After a successful launch campaign, we are growing and seeking an assistant manager to join us.

Our boutique setting combines old-world elegance with contemporary energy — from our open pasta station and signature tableside service to a carefully curated wine list showcasing exceptional Australian and Italian producers.

The Role

As the assistant manager and sommelier, you will be responsible for the management of our wine list (250 wines), the training of the team, negotiating supplier deals and delivering a world class guest experience. You will be working a long side the Venue Manager and Directors to achieve business goals.

We are open to someone that would like to take on the assistant manage role, without the sommelier scope of work.

The ideal candidate will have

3-5 Years experience in high caliber restaurants

Experience creating wine lists

Experience with wine, with focus on Italian and Australian wines

Ability to create and maintain COGS documents

Teamwork attitude

Great guest interactions

WSET 2 minimum
