We are seeking a talented Head Chef to join our passionate team and uphold our commitment to excellence, sustainability, and local Tasmanian produce. Reporting to the A La Carte Executive Chef, you will lead with professionalism and creativity, inspiring a high-performing kitchen team in a positive and inclusive environment.
Key Responsibilities
Foster and embed a kitchen culture focused on consistency, excellence, and pride in every dish served.
Lead and observe the performance and conduct of the kitchen team, upholding all standards of excellence especially in the absence of the Executive Chef.
Collaborating with the Executive Chef on seasonal menus, functions offerings and opportunistic daily specials using whenever possible our Mures catch.
Manage kitchen staffing and rostering to ensure effective coverage and adherence to labour budgets.
Oversee stock control and deliver food costs in line with budget, with a focus on minimising waste and utilising whole products.
Uphold strict food safety and hygiene standards.
Troubleshoot operational challenges to maintain smooth, high-quality service.
Support and step confidently into full leadership when the Executive Chef is away.
About You
We’re looking for a Head Chef who:
Has a flair for flavour, presentation, and innovation in seafood and modern Australian cuisine.
Is passionate about local, seasonal, and sustainable produce.
Brings at least 5 years’ experience in premium à la carte dining across Sous Chef or Head Chef roles.
Leads with a positive attitude, professionalism, and the ability to motivate a team to deliver consistent excellence.
