The Venue

Byblos Brisbane is a beautifully renovated riverside venue at Portside Wharf, offering sophisticated Lebanese and Mediterranean cuisine, elegant design, and a dynamic dining experience. Recently refreshed with a light-filled, immersive interior that harmonizes with the river, Byblos blends ancient coastal charm with modern sophistication.

This Opportunity

We are seeking a passionate and experienced Head Chef to lead all culinary operations at Byblos Brisbane. You will oversee kitchen strategy, creativity, team dynamics, food quality, and operational excellence, partnering with the Executive Chef and Venue Manager to shape our next chapter.

Key Responsibilities

Lead all facets of kitchen operations: ingredient prep, menu execution, plating, and service excellence.

Develop and refine menus that celebrate Lebanese culinary heritage with a contemporary touch.

Monitor food and labour costs, manage inventory, forecast needs, and place timely orders.

Mentor, train, schedule, and recruit a skilled culinary team to ensure peak performance.

Uphold rigorous food safety, hygiene, and compliance standards throughout the kitchen.

Collaborate closely with front-of-house staff and suppliers to deliver seamless service.

Adapt dishes to accommodate dietary preferences (e.g., low-salt, dairy-free, gluten-free).

Quickly troubleshoot issues—staffing, equipment, supply chain, guest feedback—to maintain kitchen efficiency.

Embrace additional duties as assigned by the Executive Chef or Venue Manager.

What We’re Looking For

Ideally have experience or some understanding of Lebanese cuisine

At minimum Certificate III in Commercial Cookery and Food Safety qualifications

At least 5 years of proven experience in a Head Chef or equivalent kitchen leadership role, ideally in venues of comparable scope.

Mastery of culinary techniques, including pastry, grillers, processors, and specialty equipment.

Strong leadership, team management, mentoring, and rostering skills.

Excellent time management, cost control, and operational efficiency.

Deep familiarity with sanitation, safety, and allergen standards.

Strong Kitchen management and administration skills
