About Supernormal
Supernormal is a lively, all-day, Asian inspired restaurant in the heart of Melbourne's Flinders Lane. The dining room is flanked by a long, open kitchen and bar; downstairs lies a private space for events, parties and karaoke.
Trader House beverage programmes are focused on wines and spirits that speak of place and time, from benchmark and emerging producers from across the globe. We aim for service that pleases without pretension, imparts knowledge that enriches rather than indoctrinates, and provides our guests with a genuine, personalised experience.
About the role
This is an opportunity for a career-focused bar professional with strong leadership and financial management skills, and broad spirits and cocktail knowledge, to lead the bar program.
The Bar Manager is responsible for delivering a creative and dynamic bar and cocktail program with a focus on quality, consistency and interest.
This role reports to the Beverage Manager. Responsibilities include:
The strategic and collaborative development of the cocktail menu, from R&D to rollout
Actively participating in and overseeing all aspects of industry-leading bar service
The maintenance of strong and productive relationships with producers, importers and distributors.
Overseeing stock management, purchasing, budgeting and pricing strategies, working closely with the sommelier team.
Recruiting, mentoring and training the bar and service teams, sharing expertise through tastings and education.
Working collaboratively with the other Trader House Bar Managers to build positive culture, efficiencies and innovation.
What you’ll bring:
A genuine love of the thrill of a busy restaurant and creating remarkable experiences for our guests
The skillset to run a successful bar program effectively and efficiently, working collaboratively with other department leaders.
A day-to-day sales presence behind the bar, with the ability to inspire, coach and direct your team of bartenders.
An eye for detail and a continual drive for development, improvement and innovation
Effective and adaptable time management, delegation and communication skills
A sound palate and broad awareness of classic, modern and avant-garde drinks, Australian and international spirits, and emerging trends
What you can expect
Real autonomy in your role, with clear performance indicators and positive avenues for communication
A commitment to the further development of your skills and experience as a beverage professional, with personalised mentorship and support from Trader House Beverage Director Leanne Altmann and Senior Wine Buyer Chris Ryan
Responsibility for the ongoing succession and financial success of your department
Involvement in future planning and the execution of special events and collaborations
An attractive salary, and group-wide discounts
WSET Level 2 and Level 3 in Wine qualifications available free of charge to all staff
Gone are the days of 4am closes - enjoy a balanced roster with a combination of day and evening shifts
We genuinely love hospitality, and all that goes with it. You’re not in the office all day, you're hands-on: creating, training, engaging, tasting, laughing, inspiring. This role will immerse you in all aspects of shaping a successful business, with room for personality and passion.
This position is a long-term engagement. Senior members of the Trader House beverage team work together closely, and our strength comes from support and community. Trader House looks within for talent to help build new opportunities, and there are always exciting, interesting and challenging projects on the horizon.
