Director of Food & Beverage - Premium Hotel Operation

We are seeking an accomplished Director of Food & Beverage to lead a multi-outlet operation within a leading premium hotel in central Brisbane. This is a rare opportunity for an experienced senior F&B professional to step into a broad leadership role with responsibility across restaurants, bars, in-room dining, and conference and events.

The Role:
Reporting directly to the General Manager, you will:

Lead and inspire a large, diverse team across multiple outlets and service styles.

Drive guest experience through innovation, service excellence, and sustainability.

Oversee all financial aspects of the F&B department, including P&L, forecasting, and cost controls.

Partner with the Executive Chef on menu design and product development.

Leverage technology, guest feedback, and market insights to enhance operations and stay ahead of trends.

Play a key role in broader hotel operations, supporting business objectives and cultural leadership.

About You:

7-10 years' progressive F&B management experience, with 3-5 years at senior leadership level in a hotel or large venue.

Demonstrated success managing multi-outlet operations and delivering on budgets.

Strong commercial and financial acumen with a passion for innovation.

Inspirational leader with the ability to mentor, motivate, and drive high-performing teams.
