We are seeking a highly skilled and passionate Head Chef to lead the kitchen at Restaurant II.II.VI, located at 226 Flinders Lane in the heart of Melbourne CBD. This is a rare opportunity to take the reins of a modern, premium dining venue and make your mark in one of Melbourne’s most exciting culinary precincts.

Restaurant II.II.VI offers an elevated, modern Australian dining experience, with a curated selection of high-quality steaks and diverse, seasonally inspired dishes, all celebrating open fire cooking techniques. Our vibrant cocktail bar adds a dynamic edge, featuring classic reinterpretations, inventive drinks, and a refined snack menu.

We’re looking for a Head Chef with fine dining experience who brings creativity, leadership, and precision to their craft. You will be responsible for overseeing all kitchen operations, from menu development and team management to food cost control and quality assurance. You’ll work closely with our Executive Chef to deliver excellence in every service.

Key Responsibilities

Lead, manage, and inspire the kitchen team to consistently deliver exceptional dishes

Design and execute seasonal menus that reflect innovation and quality

Uphold the highest standards in food preparation, presentation, and safety

Maintain strong cost control, stock management, and supplier relationships

Mentor junior chefs and foster a positive, productive kitchen culture

Ensure full compliance with HACCP and all food safety protocols

What We’re Looking For

Proven experience as a Head Chef or Senior Sous Chef in a fine dining environment

A deep understanding of Australian produce, open fire cooking, and contemporary plating

Exceptional leadership, time management, and organizational skills

A calm, confident communicator with the ability to guide and inspire a team

Passion for innovation and maintaining high standards under pressure

Full understanding and hands-on experience with food safety and HACCP standards
