We take pride in creating unforgettable experiences for our guests, and we are seeking a talented, creative, and highly organised Pastry Chef to lead our pastry section. The successful candidate will craft innovative, seasonal desserts, pastries, breads, and specialty cakes for both our restaurant and our event operations. You will have the freedom to design menus that reflect your creativity while maintaining the highest quality and presentation standards expected of a luxury hotel.

Key Responsibilities:

Develop and execute pastry menus for the restaurant, high tea service, in-room dining, and event catering.

Create custom cakes, petit fours, and showpieces for weddings, banquets, and special events.

Ensure consistency, quality, and aesthetic excellence in all pastry items.

Manage day-to-day operations of the pastry section, including ordering, stock control, and production schedules.

Supervise and train pastry staff, fostering a collaborative and efficient team environment.

Maintain strict hygiene and food safety standards in compliance with HACCP guidelines.

Collaborate with the Executive Chef and Events team to create innovative menu offerings.

Monitor costs, portion control, and waste to achieve budget targets without compromising quality.

Requirement & Qualifications:

Experience in a pastry role in a luxury hotel, fine dining restaurant, or high-end events venue.

Formal pastry qualification (Certificate III or IV in Patisserie or equivalent).

Strong technical knowledge of classic and contemporary pastry techniques.

Proven ability to manage production for both à la carte and large-scale events simultaneously.

Excellent time management and multitasking skills.

Sound knowledge of food safety practices and allergen management.

Experience with high tea and custom cake design is highly regarded.

Availability to work early mornings, weekends, evenings, and public holidays as required by the operation.
