GAZI isn’t another “pretty plate” restaurant. It’s a Greek supper-club colliding with club energy: DJs drop beats while octopus gyoza and flaming Bombe Metaxa fly out of the open kitchen; sax players thread through the crowd; cocktails like 'Sagittarius' & 'Virgo' keep the tempo up. What began as a high-octane pop-up from George Calombaris is now locked in at 235 Victoria St, bringing Athens’ raw street vibe to Darlinghurst every night.

THE GIG
You’ll be one of the experience-makers who:
Own first impressions – welcome guests with genuine Greek filoxenia (love of hospitality) and take orders confidently, fast and accurately.
Curate the flow – deliver food & drinks at the pace of the party so the room never loses its groove.
Read the room – notice when a table needs an extra spritz, a quieter corner, or a sparkler-lit dessert moment.
Keep it tight – cash-handling, POS accuracy, and spotless stations so service stays seamless even when the lights drop and the DJ turns up.
Back your crew – jump on polishing glassware, restock mezze plates, or coach a new teammate; no silos, all hustle.
Live our standards – nail NSW RSA rules, HACCP hygiene, and internal service rituals. Rock-and-roll vibe, Michelin mindset.
THE HUMAN WE’RE HUNTING
Infectious energy and a people-first reflex. If you brighten up crowded rooms, you’ll thrive here.
3 years in restaurants, bar or club (Greek taverna/grill advantage but not essential).
Can juggle trays, drink specs and a 120 bpm soundtrack without breaking stride.
Crystal-clear English; extra language points for Greek.
Able to stand for long stretches and lift up to 12 kg (we won’t ask for 25 kg—our kegs stay where they are).
Flexibility for nights, weekends, and the odd brunch rave.
