Marnong Estate: Marnong Estate is a premier multi-venue destination nestled on a picturesque 1500-acre winery with breathtaking vistas of the Macedon Ranges. Situated in the Sunbury wine region, we specialize in cool climate wines and offer exceptional dining experiences with an authentic Italian touch. Our offerings range from wood-fired pizzas and Josper-grilled steaks to wine tastings with artisanal cheese platters, making Marnong Estate a stunning gastronomic destination in Victoria.

The Role: We are looking for Chef de Parties' who have experience in Italian Cuisine to join our respected and established restaurant. Responsible for playing a key role in the overall success of the venue by ensuring each guest has a positive and unforgettable experience with us. We are looking for hospitality professionals who have the ability to work alongside their team and strengthen what has already been instilled. They will be supported by strong Estate Management.

Tasks & responsibilities

Responsibilities include but are not limited to:

  • Oversee a specific section in our restaurants.
  • Help to deliver a seamless operation within the kitchen.
  • Be a proactive team member who can coach and motivate others.
  • Be versatile to work across the various food outlets across the Estate.
  • Competently follow recipes to deliver a consistent high quality food offering.
  • Have a high understanding and aptitude to strictly follow food safety laws.
  • Support the kitchen team to implement kitchen policies and procedures.
  • Attend any relevant meetings related to serve production or service.

Qualifications & experience

  • Minimum 3 years of experience - including knowledge of techniques and flavor profiles.
  • Certificate III & IV in Commercial Cookery favorable.
  • Experience in working within a dynamic and high performing kitchen.
  • Strong work ethic and excellent interpersonal skills to lead by example and set a welcoming culture and environment within a fast paced and exciting work environment.
  • A passion for creating and delivering exceptional guest experiences.
