About the Role
We are looking for a talented and experienced Head Chef to join our team at Moon & Mary, a popular restaurant in vibrant Fremantle, Western Australia. The heritage listed building is a multi-faceted, 400-seater pax offering a fusion menu together with a carefully curated wine lists and excellent cocktails. As our Head Chef, you will be responsible for overseeing all culinary operations, developing innovative menus, and leading a dedicated team of chefs to deliver an exceptional dining experience for our customers. This is a full-time position based in our Fremantle restaurant.
Our ideal Head Chef will be a proactive person with an ability to create and implement culinary masterpieces that are not only pleasing to the eye but to the palate as well. With his/her excellent leadership and communication skills, the Head Chef will lead a team of chefs and cooks with a diverse range of skills and background to deliver exceptional dining experiences. As this is a key leadership role, our ideal candidate will want to invest time in the growth and development of the team and be constantly engaged in inspiring, supporting and mentoring the BOH team.
Key Responsibilities:
Manage all aspects of the kitchen operation, including menu planning, recipe development, inventory management, and budgeting
Lead, train, and motivate a team of dedicated chefs and kitchen staff to ensure consistent high-quality food preparation and presentation
Develop and implement new menu items that showcase your culinary expertise and align with the restaurant's overall concept and brand
Together with the BOH team ensures compliance is maintained in all operational procedures in the kitchen according to HACCP and health and safety requirements
Foster a positive, collaborative, and efficient work environment in the kitchen
Work closely with the front-of-house team to ensure seamless service and customer satisfaction
Attend any scheduled meetings or trainings when required
Expected skills/qualifications
Minimum 5 years’ experience managing back of house operations
Formal academic qualification in culinary cooking including certificates required by the Health Department or local councils
Experience with high volume production
Ability to handle raw seafood preparation
Passion in learning and be able to handle constructive feedback
Experience with Western and Southeast Asian cuisine
Strong financial acumen
Competent in Microsoft Office Skills including Word, Excel and Outlook
Competent in procurement processes and utilising Restoke is highly desirable
