Welcome to the debut of Blackbird Bar, Dining & Events in Melbourne, an exciting expansion from our acclaimed Brisbane flagship, renowned for over a decade. Nestled at 66 Flinders Lane in Collins Place, at the vibrant intersection of Exhibition Street, our new venue promises to blend the essence of Blackbird Brisbane with Melbourne’s unique urban allure. We have an extraordinary kitchen leadership team to help you develop and grow with our Group Executive Chef, Jake Nicolson, Executive Chef, Tim Menger (ex-Entrecôte), and Head Chef, Josh Moroney (ex-Nomad).

Opening its doors in August, Blackbird Melbourne will be a sophisticated sanctuary across three levels. Embracing a contemporary aesthetic with rich, contrasting textures and a warm, inviting ambiance, our venue invites guests into an intimate cocktail bar on street level, complete with a sunken lounge for a tranquil escape from the bustling city.

A central staircase adorned with a striking chandelier leads to a multi-story experience. Level 1 features a split-level dining room, offering both an expansive mirrored-ceiling dining space and a more secluded area with deep charcoal tones. Ascend further to discover private dining rooms and function spaces, each designed to cater to every occasion.

Key to your success will be your demonstrated ability to:

Assist in setting up workstations with required ingredients and equipment

Prepare ingredients for cooking, including washing, peeling, chopping, and portioning

Support the Chef de Partie in cooking dishes to menu specifications with an eye for presentation

Follow food safety, hygiene, and sanitation guidelines at all times

Properly store food items and monitor stock usage, notifying senior chefs of shortages

Maintain cleanliness and organisation of kitchen equipment and utensils

Contribute to minimising food wastage through accurate preparation and storage practices

Take direction and feedback positively to continually grow and develop your culinary skills

Collaborate with team members to maintain a smooth and efficient kitchen operation

Carry out other kitchen tasks as requested by the Chef de Partie or senior chefs
