Join the team at a’Mare, one of Sydney’s most iconic fine dining destinations located within Crown Sydney, under the creative direction of celebrated chef Alessandro Pavoni of Pavoni Plus Pty Ltd.

We are looking for an experienced and service-driven Head Waiter / Sommelier to bring genuine hospitality, expert wine knowledge, and a passion for Italian cuisine to our world-class venue.

Essential Requirements

Full Australian working rights

Current NSW RSA Certificate

Minimum 1–3 years’ experience in premium dining and/or formal hospitality studies

Fluent in English with excellent communication skills

Food and wine pairing experience in a fine dining setting

Experience using POS systems

Formal wine studies (WSET Level 2 or equivalent preferred)

Exceptional grooming and presentation

Ability to multitask and remain calm under pressure

Preferred Requirements

Formal hospitality education or training

Knowledge of Italian wines and regional Italian cuisine

Familiarity with reservation systems such as SevenRooms

Italian language skills a bonus

Key Responsibilities

Lead and manage your own section during service with precision and warmth

Ensure your section is clean, stocked, and fully guest-ready pre-service

Provide knowledgeable recommendations on both food and wine

Deliver thoughtful food and wine pairings aligned with guest preferences

Accurately process orders and communicate dietary requirements to the kitchen

Support fellow waitstaff and maintain high standards of service throughout

Handle billing, payment processing, and resolve any guest concerns with care

Assist with clearing and resetting tables and glassware as needed
