Grill Chef – Full-Time
Bridge Hotel Werribee is on the hunt for a Grill Chef who knows their way around high heat, precise temps, and a fast-paced kitchen. This is a hands-on role for someone with solid experience running a grill section in a busy pub or restaurant environment. If you’re confident, reliable, and love the rhythm of a packed service, we want to hear from you.

You’ll be joining a kitchen team that values consistency, maturity, and efficiency, where your grill work will be front and centre. Bonus points if you’ve got the leadership skills to step up during service when needed.

What You’ll Be Doing?

Running the grill section with precision, especially during peak periods.

Cooking steaks, burgers, chops and other proteins to spec—fast, clean, and consistent.

Managing prep and stock for your section to keep things running smoothly.

Keeping your station clean, safe, and food-compliant at all times.

Jumping in to help lead the team during busy services.

Supporting the kitchen team and maintaining standards across the board.

Minimum Requirements

Certificate III in Commercial Cookery (mandatory)

Minimum 4 years’ experience in a similar fast-paced kitchen environment

Proven experience working a grill section solo or as lead

Understanding of HACCP, food safety, and OH&S procedures

Availability for nights, weekends, and public holidays

Able to work efficiently under pressure and stay composed during busy services

Desirable Attributes

Food Safety Supervisor certification (preferred or willing to obtain)

Experience in pub bistro or gastropub-style venues

Familiar with prep planning, stock control, and closing procedures

Good communicator and team player with a calm, professional attitude

Leadership potential—able to guide and support junior staff when needed

Treats the grill like their domain—takes pride in quality, speed, and consistency
